JACOB HOLMSTRÖM – THREE OF A KIND IN FISH

Jacob Holmström, who ran the two-starred Gastrologik for over a decade and then concluded his time in Stockholm by overseeing the Nobel banquet in 2023, has now created three recipes for us fermented herring lovers.

Nowadays Jacob lives in Halmstad and runs Restaurant Fyr together with his wife Emelie Leijon, located by the beach in Tylösand.

CROQUETTE WITH SMOKED COD AND FERMENTED HERRING

INGREDIENTS

  • 1/2 finely chopped yellow onion
  • 2 tbsp butter
  • 2 dl thick béchamel sauce
  • 200 g smoked cod or other hot-smoked fish
  • 4 fermented herring fillets, cut into small pieces
  • 2 tbsp finely chopped chives
  • 1 lemon, both zest and juice
  • Black pepper
  • Wheat flour
  • Egg
  • Panko
  • Frying oil

METHOD

Fry the finely chopped onion in butter until soft. Add the béchamel sauce and remove from heat. Whisk in the hot-smoked fish until finely distributed. Season with fermented herring, chives, lemon zest, black pepper and a little salt if needed. Let cool completely, then roll into small balls and freeze for a couple of hours.

Coat the balls in flour, then lightly beaten egg, and finally panko. Let thaw for an hour before frying.

Deep fry at 170°C until golden.

Serve as snacks with a little lemon juice.

Croquette

CRISPY WAFFLE WITH FERMENTED HERRING, SOUR CREAM, ONION AND LEMON

INGREDIENTS

  • 150 g browned butter
  • 480 g wheat flour
  • 10 g salt
  • 10 g baking powder
  • 500 g milk
  • 500 g carbonated water
  • Crème fraîche or smetana
  • Finely chopped red onion
  • Dill
  • Lemon
  • Fermented herring fillets

METHOD

Melt the butter and mix with the wheat flour, then add all other ingredients and whisk until smooth.

Pour into a siphon bottle and charge with 2 cartridges.

Bake in a waffle iron until crispy, break apart the waffle pieces and serve with the toppings.

  • 10 g salt
  • 10 g baking powder
  • 500 g milk
  • 500 g carbonated water

  • Lemon
  • Fermented herring fillets

SOUR CAESAR AS CAESAR SALAD

INGREDIENTS

  • 150 g browned butter
  • 2 fermented herring fillets
  • 2 garlic cloves
  • 50 g Parmesan
  • 200 g softened salted butter
  • Black pepper
  • Lemon juice

METHOD

Finely chop the fermented herring fillets and the garlic and mix with the softened butter. Grate the Parmesan finely and stir in. Season with lemon and black pepper.

Use the dressing to flavor warm vegetables such as black kale, kale, Brussels sprouts, broccoli or other seasonal produce. A real flavor enhancer!
