JOHAN BERLIN’S OPEN SANDWICH

This is how you make Johan Berlin’s open sandwich with whole herring.

INGREDIENTS

  • Hard flatbread
  • Butter
  • 4 whole herrings
  • 2 boiled almond potatoes
  • Sour cream
  • Finely chopped red onion

METHOD

Spread a thin layer of butter on the flatbread slice. This helps to keep the other ingredients in place. Clean four whole herrings and distribute them evenly over the bread. Whole herring is preferred as it gives more depth of flavor. Slice the almond potatoes and distribute on top.

The potatoes should preferably have cooled a little before placing them on the herrings. Add a dollop of sour cream. The sour cream balances the fermented herring and gives a mild taste. Finally, top with finely chopped red onion as the finishing touch.
